The Vietnamese eatery Paris Bánh Mì began its soft opening on Saturday.

It sells Vietnamese Bánh mì sandwiches, which are made with French baguettes. Many of them include the traditional liver pâté and add grilled pork, shredded chicken or ham. There’s a veggie option with dried soybean curds. Croissant or burger-sized sandwiches come with similar fillings.

The menu includes pho – a noodle soup with veggies and various meat options – as well as vermicelli bowls without the broth. Fried egg rolls and Korean corn dogs are offered too. (In my opinion, the corn dogs, which feature lots of panko, cheese and toppings like hot Cheetos, stray from the Vietnamese branding.)

It also has Vietnamese iced coffee drinks, milk and fruit teas and slushies, with optional toppings like boba.

Hours during the soft opening are 9 a.m. to 9 p.m. daily. It’s in the courtyard area of The Davis Collection, on Russell Boulevard between Anderson Road and Sycamore Lane. Parking is a big problem for the center, so if you can brave the cold on your bike, it’ll guarantee you won’t have to turn back.
